Jam cookies

Yield: 30 cookies

Ingredients 

[A]

  • Cake flour: 360 g
  • Unsalted butter: 150 g
  • 3 egg yolks
  • Granulated sugar: 120 g
  • A pinch of salt

[B]

  • Your favorite fruit jam

Dough weight: 700 g

Instructions 

1. Combine all the ingredients [A] until the dough is smooth. Be careful not to overmix. Wrap the dough in plastic wrap and refrigerate overnight.

2. Use a dough sheeter to roll out the dough. Gradually adjust the thickness until it reaches 5 mm.

3. Use a cookie cutter to cut out shapes from the dough. For half of the cookies, cut out a smaller shape in the center using a smaller cutter. Place the cookies on a baking tray.

4. Bake at 170–175°C (338–347°F) for 18–20 minutes. Adjust the time and temperature as needed depending on your oven.

5. Add about 1 teaspoon of jam [B] to the center of each cookie. Gently place a matching cookie with a cutout on top.

6. Serve and enjoy!
