- Strong flour: (100%) 600 g
- Sugar: (6,5%) 39 g
- Instant dry yeast: (1%) 6 g
- Salt: (1,8%) 11 g
- Water: (57%) 342 g

Instructions
Since the bagel dough must be baked immediately after boiling, make sure the oven is preheated to 220°C (428°F).
1. Mix all the dough ingredients together and knead until the dough comes together.
2. Divide the dough into 10 pieces (approximately 100 g each). Cover with a damp cloth and let rest for 15 minutes.
3. Roll each dough piece into a 15 cm long strip. Fold it into thirds and overlap the ends by about 2 cm.
If the ends overlap, push one end aside to cover the other.
4. Place the shaped dough in the proofer and let rise at 35°C (95°F) for 30 minutes.
5. While the dough is rising, prepare a pot of sweetened hot water for boiling the dough.
6. Once the dough has risen, boil each piece for about 1 minute.
7. Bake in the preheated oven at 190°C (374°F) for 15 to 18 minutes. Baking time and temperature may vary depending on your oven.
8. Add your favorite toppings.
