How the Manual Dough Sheeter Was Born 

In its early years, Japan Kneader developed and sold its own kneading and proofing machines in Japan. However, typical Japanese home kitchens are compact, making it difficult to accommodate large electric equipment.

As home baking grew in popularity, we began exploring the idea of creating a machine specifically designed for home use — one capable of handling the laminating process required for pastries such as croissants, yet compact enough to fit comfortably into a small kitchen.

 

Where the Dough Sheeter Began

As we explored the concept of an electric dough sheeter, our attention turned to the tatara forming machine — a device commonly used in ceramics to roll clay into flat sheets of uniform thickness.

Because the fundamental function — rolling material evenly — is similar to the lamination process used in pastry making, we began to wonder whether the same mechanism could be adapted for food production. This question marked the starting point of our new product development. However, adapting the machine for food use presented significant challenges. Preventing rust on the main body and carefully selecting food-safe materials for all parts that come into contact with dough were essential considerations.

We also discovered that doughs high in fat and moisture tended to stick to the rollers and boards, making proper lamination difficult. It took considerable time and experimentation to identify the right materials and refine the structure to achieve reliable, consistent performance.

Stainless Steel at the Core of Our Dough Sheeter

The stainless steel used in our dough sheeters is manufactured at trusted factories across Japan, including the renowned Tsubame-Sanjo region in Niigata Prefecture.

These factories are highly respected for their advanced metalworking expertise and consistently high quality. The material is valued not only for its refined finish, but also for its durability and reliability — qualities that make our dough sheeters trusted tools for daily professional use. From a hygiene perspective, stainless steel is also an ideal material, helping to ensure maximum food safety.

Throughout development, we focused not only on compactness but also on ease of cleaning. The rollers of the RS201 can be removed, allowing for thorough washing and ensuring the machine can always be stored in a clean condition after use.

In addition, the rollers have cooling retention properties. By chilling them in the refrigerator before use, you can maintain a lower dough temperature during lamination.

In September 2019, the Manual Dough Sheeter RS201 was officially launched in Japan. It quickly attracted widespread attention and brought laminated dough making into home kitchens across the country. As interest grew internationally, we gradually navigated the complexities of overseas shipping and began offering global delivery, step by step.

As demand for the RS201 grew, many customers expressed interest in a model that could be stored even more compactly. This feedback led to the development of the RS101. Instead of incorporating a folding mechanism, we reduced the machine’s footprint and simplified its structure. By eliminating the detachable rollers and folding components, we created a more compact and streamlined design.

In December 2021, the RS101 was officially launched in the Japanese market. 

 

With the addition of the RS101 alongside the RS201, our two-model lineup gained strong recognition both in Japan and internationally. As inquiries and global adoption continued to increase, we strengthened our organization by establishing a dedicated team for overseas customer support, marketing, and logistics — further accelerating our international expansion.

 

In July 2023, the launch of our official online store enabled us to respond more efficiently to international orders and customer inquiries worldwide.

Then, in 2025, responding to growing demand for a larger manual sheeter, we expanded our lineup with the RS301. Featuring an innovative one-handed thickness adjustment system, the RS301 sets a new standard for control and efficiency in manual lamination.
